Monster Cookies

Preheat oven 350

6 eggs
2 1/3 cups brown sugar
1 cup margarine
2 cups white sugar
1 1/2 tsp vanilla
4 tsp baking soda
2 2/3 cups peanut butter
9 cups oatmeal
1 1/2 M & M's
1 1/2 Chocolate chips

Mix all ingredients and cook for 12 minutes

Makes a ton of cookies(that's my best guess!)

Cashew chicken with manderine oranges

2 boneless chicken breasts
3 Tbsp soy sauce
3/4 cup chicken broth
1 Tbsp cornstarch
2 Tbsp frozen orange juice concentrate
2 Tbsp honey
1 cup sliced celery
1 can maderine oranges
3/4 cup cashews

Srif fry chicken in cooking oil until browned. Add celery and cook for 2 minutes. Mix together broth, soy sauce, orange juice and honey. Add chicken and cook unil thickened. Add oranges and cashews 5 minutes before serving. Do not over stir.

Serve with rice.

Navajo Tacos

These are a family favorite! If you need to make them fast you can use Rhoads frozen rolls for the fry bread(scones). I also will make the beans in the crock pot sometimes and sometimes on the stove. The scone recipe makes quite a few so it is fun to have the leftovers for later.

Beans
I use 5 cans of various beans(whichever I have in my cupboard at the time) Usually kidney beans, black beans, white beans, chili beans.(do not drain!!)
1 large can of tomato sauce
1 pkg of either taco or chili seasoning(I like the taco better but I use whatever I've got)
you can add a pound of cooked hamburger or cooked onions.
I have put a can of corn in it and it has been good as well.
Cook it on the stove with lid on med for about 30 minutes and them on low until you are ready to eat. It will be a little runny if you don't let it cook down a little bit.

Scones


2 pkgs dry yeast(2 Tbsp)
1/2 cup warm water
1 Tbsp sugar

Mix together and set aside

1/2 cup sugar
1 cup boiling water
1/2 cup margarine or butter
2 tsp salt

Mix together in large bowl.

3 eggs beaten
Add to butter/sugar bowl and mix until well blended

Add yeast mixture and 2 cups of flour to the large bowl of other ingredients and beat until smooth

Add 2 1/2 cups flour and mix.
Let rise for 1 hour
Put dough in refrigerator until cool(you can leave it overnight if you want)
Roll out thin(about 1/4 in.) and cut into squares of desired size
Fry in oil.

Serve with toppings that you normally put on tacos.

Water punch

Makes 5 quarts

1 Tbsp lemon extract
1 Tbsp citric acid
5 quarts of water (ice included)
2 1/2 cups sugar

fresh lemons on top.

Easy triple chocolate cake

1 pkg dark chocolate cake mix
1 pkg chocolate pudding (3.9 oz)
4 eggs
1 cup sour cream
1/2 cup warm water
1/2 cup oil
1 1/2 cup chocolate chips

cook in bunt pan at 350 for 45 - 50 minutes. Let cool on rack for 25 minutes. Dust with powdered sugar.

Cinnabon Cinnamon Rolls

Rolls:

Mix and let rise to double 2 times.

Bake at 350 degrees for 15-20 minutes.

1/4 cup butter melted
1/4 cup water
1/2 package instant vanilla pudding(1/2 of 3.4 oz)
1 cup milk
1 egg beaten
1 Tbsp sugar
1/2 tsp salt
4 cups bread flour
2 1/2 tsp yeast

Filling:

1/2 cup butter softened
1 cup brown sugar
1/4 cup chopped walnuts(optional)
2 tsp cinnamon
1/4 cup white sugar

Frosting:

4 ounces cream cheese
1/4 cup butter softened butter
1 1/2 powdered sugar
1/2 tsp vanilla
1 1/2 tsp milk

Fruit Salad

2 cans pineapple tidbits
2 cans mandarin oranges
2 cans fruit cocktail
Fudge striped cookies
2 sm. packages vanilla instant pudding
2 cups buttermilk
12 oz. whipped topping

Drain fruit well. Combine dry pudding mix with buttermilk. Fold in whipped topping. Add fruit. Mix in broken fudge striped cookies. Top with more cookies.
